1- 1 ½ cups Raw, Organic Cashews, soaked for 6-8 hours or overnight; drained and rinsed.
½ - ¾ cup organic, coconut or almond milk
4-6 TBSP raw local honey or maple syrup, to taste
1 tsp vanilla extract
1 tsp fresh organic lemon juice
1 tsp cinnamon
Garnish of cardamom, cinnamon, raw cacao nibs, and/or orange or lemon zest
Directions 1 This is a fast and easy non-dairy alternative to whipped cream, cream cheese or yogurt. It has great alkalizing and anti-inflammatory benefits. Makes approximately 2 cups.
2 Measure the first five ingredients into a powerful blender such as Vitamix or NutriBullet. Process until well combined and creamy, scraping down sides as you go.
3 Taste and adjust sweetness and thickness as needed. Then transfer to a glass bowl or wine glass. Garnish as suggested.
4 Serving Ideas: Layer with berries, hemp seeds or granola as a parfait or breakfast. Makes a powerful protein meal or treat.
