MANGO TILAPIA
Ingredients
1 lb tilapia or other firm white fish
3 tsp coconut oil
1 cup chopped mushrooms
3 chopped scallions (alternate=shallots)
1 cup frozen mango chunks, partially thawed (alternate=pineapple)
Seasonings: salt & pepper, lemon pepper, red pepper flakes, thyme
1 Tbsp grass-fed butter, e.g. Kerrygold
1Tbsp lemon juice
Directions

Preheat skillet on medium-high with oil. Season fillets. (Optional: Coat with coconut or almond flour.)

Place fillets carefully in hot oil. Turn fish after 2 minutes. Cook 2 more minutes. Lower heat and move fish to side.

Add mushrooms and cook till wilted. Add scallions and cook till wilted. Add mango. Season to taste.

Add butter, lemon juice and thyme to vegetables. Cook 1 minute, then spread over top of fillets and cook 1 more minute. Serve hot.
