MANGO TILAPIA

Ingredients
  • 1 lb tilapia or other firm white fish
  • 3 tsp coconut oil
  • 1 cup chopped mushrooms
  • 3 chopped scallions (alternate=shallots)
  • 1 cup frozen mango chunks, partially thawed (alternate=pineapple)
  • Seasonings: salt & pepper, lemon pepper, red pepper flakes, thyme
  • 1 Tbsp grass-fed butter, e.g. Kerrygold
  • 1Tbsp lemon juice

Directions


1 Preheat skillet on medium-high with oil.  Season fillets. (Optional: Coat with coconut or almond flour.)

2 Place fillets carefully in hot oil.  Turn fish after 2 minutes.  Cook 2 more minutes.  Lower heat and move fish to side.

3 Add mushrooms and cook till wilted.  Add scallions and cook till wilted.  Add mango.  Season to taste.

4 Add butter, lemon juice and thyme to vegetables.  Cook 1 minute, then spread over top of fillets and cook 1 more minute.  Serve hot.
