CHOCOLATE CHIA PUDDING

Ingredients
(Serves 2)
  • 1 1/4 cup unsweetened non-dairy milk (almond, coconut or hemp milk) 
  • 1/4 cup chia seeds
  • 1 TBSP hemp seeds (optional)
  • 2-3 TBSP raw cacao powder
  • 1 TBSP organic maple syrup
  • 1 scoop optional SunWarrior or Vega protein powder (chocolate or vanilla) OR
  • 1 tsp pure vanilla extract
  • 1/4-1/2 tsp cinnamon to taste (or 1/4 tsp curcumin and 1/4 tsp cinnamon for an anti-inflammatory boost!)
  • Dash of pink Himalayan sea salt
  • Dark chocolate shavings for garnish

Directions
1 Add all ingredients except shavings to a glass container with a lid, stir. Put the lid on and shake really well.  

2 Refrigerate until very thick and pudding-like, at least 4 hours or overnight, shaking or stirring occasionally. Add more milk if too thick. 

3 Serve pudding chilled with whatever toppping you like.

4 Toppings: goji berries, nut butters, coconut shreds, nuts, pomegranate seeds, berries, or whipped coconut cream.  Also, try the Vegan Cashew Creme as a topping.
